I’ve had some cherries in my fridge for a while and I hate for things to go waste especially fruits, since they can be so expensive. There a a few simple cherry recipes I could make but while I’ve been trying to make sure I have things to keep me cool during this summer heat, I decided to go for making a cherry syrup.
Cherries always remind me of peak summer because that’s when they’re in season. Though, that makes me a bit sad as well, because they remind me fall is next in line. Well, I won’t dwell on what’s not here yet and I’ll rather enjoy what’s present.
Cherry season is short but this syrup stretches them out a bit longer. However, even if all you can get your hands on are frozen cherries you can still make a great syrup out of that too! So let’s make some delicious homemade cherry simple syrup.

What you’ll need to make cherry simple syrup
- A bowl of fresh or frozen cherries
- White granulated sugar
- Water

How to make cherry simple syrup
- If you are using fresh cherries, start by removing the pit in the center either using a metal straw to poke through them or get a cherry pit remover tool.
- Add the cherries, white sugar and water in small saucepan and cover. Let it simmer gently for 15 – 20 minutes on low heat.
- Take it off the heat and strain using a fine mesh strainer and let it cool to room temperature.
- Bottle it up in any container or jar of your choice and transfer to the fridge immediately.

Notes
Use the cherry simple syrup within 2 weeks.
If you want a thicker cherry syrup, allow it to continue to simmer on low heat uncovered. The syrup will begin to thicken as it reduces. Feel free to stop the process when you reach your desired consistency.
For a thick glossy cherry syrup, mix in 1 tbsp of cornflour and water to make a slurry. Stir the slurry in carefully and your syrup should thicken immediately. Make sure you remove the syrup from the heat after it thickens because it can disintegrate if cooked for longer.
What you can use cherry syrup on
Mocktails: mix with lemon juice, sparkling water, or botanical tonics.
Iced teas: add to black or green iced tea for a subtle cherry twist.
Lemonades: stir into homemade lemonade to make cherry lemonade.
Lattes: add a splash to coffee, iced matcha or cold brew for a floral-sweet edge.
