- Yellow Onion – these are mild tasting and when carefully fried will develop a caramel flavor. This is great for this recipe because we need all the flavors we can get.
- Italian Sausage – Italian sausage is seasoned with fennel and garlic and that ultimately improves the taste of this tortellini soup.
- Fresh Baby Spinach – nothing tastes as good as fresh vegetables so please don’t skimp on this.
- Tomatoes – for freshness, I opted for fresh raw tomatoes I chopped myself. However, using a can of crushed or chopped tomatoes will deliver similar results.
- Beef Broth – this is the soup base. The broth is essential for developing soup flavors.
- Carrot – because you can never have too many vegetables. Also, there is something fun about having other goodies in your soup.
- Extra Virgin Olive Oil – this helps the onion develop nice flavors and olive oil has its own unique flavor it adds to dishes.
- Paprika – this spice has a mild flavor derived from ground sweet red peppers.
- Salt and Pepper – to taste
- Italian Seasoning – it intensifies the flavor build-up of this recipe.

- Pour the chopped tomatoes into the pot and stir all together with the onions and sausages. Add the Italian seasoning, paprika, salt, and pepper then stir until well combined. Allow this mix to fry for 30 seconds.
- Deglaze the pot by adding the broth. Stir to combine the mixture evenly while also scrapping the bottom of the pot to deglaze it. Don’t forget to do this because a lot of flavors will be missed out on.
- Add the cheese tortellini, cover the pot and let it simmer in the soup on medium-high heat according to the cooking time on the package.
- Add carrots halfway through the cooking time. Once the tortellini is cooked, add the spinach, stir and turn off the heat. Allow spinach to wilt down then serve.

The best way to make this recipe ahead is by making the soup base, allowing it to completely cool down, and then freeze. It can last up to 2 months. When ready to make the dish, thaw out the soup in the fridge overnight and then add the fresh cheese tortellini to the soup then cook.
