This Mediterranean Vegetable Galette recipe is a healthy appetizer pie that is sure to disappear in seconds, it perfectly pairs with a salad for a complete meal.
French cuisine describes galettes as flat and round or freeform crusty cake varieties popular in the French region. Essentially, this treat is a baked pastry filled with either fruit or savory ingredients like in this case, then wrapped and baked.
Taking savory ingredients and stuffing them into a galette turns it into an appetizer from dessert. Mediterranean dishes are known for the use of healthy ingredients, which is why you will enjoy this recipe. I especially love recipes that take very little preparation and baking effort. Ingredients You’ll Need
- Store-Bought Pie Shell – it is fine if you choose to make your own galette dough, however, store-bought pie shells work just fine. This Mediterranean galette came out with a light and flaky crust so you can’t go wrong. Also, it’s quick! I love recipes that are easy to make.
- Ricotta Cheese – this cheese has a mild taste when compared to the other 2 used in this recipe. However, it is creamy and can hold a shape.
- Goat Cheese – not a lot of people like goat cheese for its ‘gamey’ smell but it’s very delicious when used with complementary ingredients.
- Feta Cheese – crumbled and sprinkled all over this dish will boost the flavor even more. I wouldn’t skip this step.
- Grape Tomatoes or Cherry Tomatoes – you can use either type of tomatoes in this recipe. They are very similar in taste; sweet and light.
- Artichoke Hearts – the flavor is not too strong that you will be overwhelmed by it, but it has a delicate sweetness with hints of nutty flavor.
- Green and Black Olives – use pitted olives to garnish this pie for easier consumption.
- Spinach – This is another popular ingredient found in Mediterranean dishes. It adds freshness and a very easy way to pack nutrients into your diet.
- Fresh Dill – dill is one of my favorite recipes to include in dishes whenever there’s a place for it. This will help flavor the cheeses mentioned above.
- Salt and Black Pepper – flavor enhancer.
- Olive Oil – to garnish.
How To Make This Recipe
- Preheat your oven to 450 degrees F.
- Put the thawed pie shell on a parchment-lined baking pan.
- Add the ricotta cheese, goat cheese, salt, pepper, and chopped dill into a bowl and mix thoroughly.
- Carefully dollop spoonfuls in the middle of the pie shell. Use the back of a spoon or spatula to smoothen it down leaving at least an inch of a room away from the perimeters.
- Next, layer the tomatoes cut side up on the cheese, then the artichokes.
- To fold the edges, carefully lift one edge and fold it inside towards the filling, then lift the next edge, fold it in again. Keep doing this till the edge is fully folded inside towards the filling.
- Bake it in a preheated oven for 20 minutes.
- Cook spinach for 2 minutes in boiling water in a small pot. Drain in a sieve.
- Once the galette has been fully baked, garnish the top with green and black pitted olives, the blanched spinach, and crumble some feta cheese all over the top. Lastly, drizzle some olive oil all over the top.
Extra Notes
Let the pie shells thaw in the fridge so that they stay cold before baking. This allows the pie to have a flaky crust.

- 1 tsp. Black pepper
- 1 tbsp. Olive Oil
Instructions
- Preheat your oven to 450 F.

- In a small bowl, mix the ricotta cheese, goat cheese, salt, pepper, and chopped dill together until well combined.

- Layer the tomatoes down cut side up on the cheese, then follow with the artichoke hearts.

- Set it in a preheated oven and bake for 20 minutes.
- Bring water to boil in a small pot, add the spinach, and blanch for 2 minutes. Turn it into a sieve and set it aside to drain.
- Once the galette has been fully baked, garnish the top with green and black pitted olives, the blanched spinach, and crumble some feta cheese all over the top.
- Lastly, drizzle some olive oil all over the top.
Notes
Thaw the pie shells in the fridge so that it remains cold before baking. This helps the pie achieve a flaky crust.
