Slovakia is typically eaten straight off the skewer but you can make them into a balanced meal by adding pita, fried potatoes, Greek salad, and tzatziki sauce. CHICKEN SOUVLAKI SKEWERS
- Chicken Breasts – this is my favorite cut for souvlaki. It is healthy and will provide sizable thick chunks.
- Souvlaki Marinade – this marinade is made of lemon juice, olive oil, salt, oregano, and garlic. You can go ahead and make it fresh but using a quality store-bought one works well too.
- Black Pepper – to season the chicken.
- Metal or Bamboo Barbecue Skewers – if you are using bamboo skewers, make sure to soak them in water first for a couple of hours. This will prevent burning.
SIMPLE GREEK SALAD
- Romaine Lettuce, Pitted Kalamata Olives (Black or Green works fine too), Red Onions, Cherry Tomatoes, and Feta Cheese.
YELLOW RICE
- Long Grain Rice, Salt, Curry Powder and Turmeric Powder.
OTHERS
- Pita or Naan Bread
- Store-bought Tzatziki
How To Make Chicken Souvlaki Skewers
- Place the chicken breasts on the chopping board and slice down the middle to get 2 long halves. Cut each one into four or five bite-size chunks and set them aside in a mixing bowl.
- Add souvlaki marinade, salt, and pepper to the chicken breast chunk, stir and cover with plastic wrap. Place in the fridge to marinate for 15 minutes or more.
- In a separate bowl, soak the bamboo skewers in some water. This will prevent them from burning in the oven. Set aside.
- Pre-heat oven to 400F for about 15 minutes.
- Line the skewers with 4 -5 pieces of chicken each and set them on a grilling pan.
- Roast them in the oven for a total of 8 minutes making sure to turn them halfway in for even cooking.
How To Plate A Souvlaki Bowl
Put some rice on one side of the plate, some salad on another side. Add two chicken skewers per plate, bread on another side then put a dollop of tzatziki in the middle or drizzle over the chicken if you prefer.
